STEP 1: PREP THE INGREDIENTS • Boil a large pot of salted water and cook pasta for 8-10 minutes. Drain and rinse pasta with cool water. • Peel and finely chop the shallots and ginger. • Separate bok choy leaves from stems and chop the bok choy stems. • Trim, deseed and slice the bell pepper. • Chop peanuts. STEP 2: LET’S GET COOKING • Warm 2 tbsp of oil in a large skillet to medium-high heat. Add the shallot and ginger stirring until just brown, about 1 minute. • Add bok choy stems, bell peppers and ¼ tsp salt. Cook stirring frequently for 1 minute. • Add bok choy leaves, veggie broth, ¾ cup of water & Fuud Sauce Mix. Cook and stir for about 1-2 minutes. STEP 3: FINISH IT UP • Add pasta, chopped peanuts and red pepper flakes to the pan (using ½ the red pepper flakes will give it a nice kick). • Toss to combine. • Divide between serving bowls and enjoy!
