Turkey Soup with Israeli Couscous CHEFS WORD

Fennel also contains phosphorous, zinc, copper, manganese, selenium, niacin, pantothenic acid, folate, choline, beta-carotene, lutein, and zeaxanthin, vitamin E, and vitamin K.

STEP 1: PREP THE INGREDIENTS • Smash, peel and chop the garlic. • Trim and dice the onion. • Trim and dice the carrots. • Trim and dice the fennel. • Trim and dice the parsnip. • Trim and dice the celery. • Chop the turkey into bite sized pieces and season with salt and pepper. STEP 2: COOK VEGETABLES AND QUINOA • Heat 2 tbsp olive oil in a large pot or dutch oven over medium heat. • Add the turkey and cook for 2 minutes, stirring occasionally. • Add the onion and garlic and cook until translucent, 3-4 minutes. • Add the carrots, celery, parsnip and fennel and bay leaves. Stir and cook for 2 minutes more. • Combine the broth concentrate with 6 cups of water. Add to the pot along with the parmesan rind and cilantro. • Bring to a boil then add the israeli couscous. Reduce heat to low and simmer, cover for 10 mins. STEP 3: SEASON AND SERVE • Taste the soup and season with salt and pepper to taste. • Divide between serving bowls, removing the parmesan rinds and bay leaf. Enjoy! Share your creation
