Preheat the oven to 450°F (to roast the bell peppers). Start prepping when the oven comes up to temperature!

PREP
Wash and dry all produce.* Bring
a large pot of salted water to a boil. Zest, then cut the lemon in half. Cut one lemon half into wedges. Core, then thinly slice the bell peppers. Mince or grate the garlic. Thinly slice the basil leaves.

ROAST PEPPERS
On a baking sheet, toss the bell
peppers with a drizzle of oil. Season with salt and pepper. Roast in the centre of the oven, stirring halfway through cooking, until tender, 14-15 min.

COOK PASTA Meanwhile, add the pasta to the
boiling water. Cook until the pasta is tender, 9-11 min. (When the pasta is done, reserve 1/3 cup pasta water in a cup, and drain the pasta.)

TOAST PANKO Heat a large pan over medium
heat. Melt 2 tbsp butter in the pan. Add the panko and half the Italian seasoning. Cook, stirring often, until toasted and golden-brown, 2-4 min. Transfer to a plate.

COOK SHRIMP Add a drizzle of oil to the same
pan, then the shrimp. Sprinkle with remaining Italian seasoning and garlic. Cook, stirring occasionally, until the shrimp just turns pink, 1-2 min. Add the peppers, pasta, pasta water, lemon zest and squeeze over the remaining lemon half. Stir until everything is warmed through, 1-2 min. Season with salt and pepper.

FINISH AND SERVE Divide the pasta between bowls.
Sprinkle with the crispy panko and basil. Squeeze over a lemon wedge, if desired.
