ALL ABOUT THE BEEF USDA “CHOICE” CHILLED BLACK ANGUS RIBEYE STEAK It’s a mouthful but we promise you it’s a mouthful of goodness – let’s break it down: USDA “CHOICE” This beef has been certified by USDA (United States Department of Agriculture) as a “choice” quality grade. They regulate stringent controls in meeting the world’s strictest health and hygiene standards at every stage of production, processing and distribution. Certified beef have to go through voluntary and strictly defined grading which takes into account physiological maturity and level of marbling to predict consistently high standards of tenderness, juiciness and flavour. Production of this beef has been tailored for a unique taste and tenderness due to attentive rearing techniques and grain feeding of single purpose oxen. We only use beef that is high US “Choice” for its moderate marbling as that is the balance of flavour and texture that we personally prefer.
CHILLED Chilled - not frozen – which means it’s a fresher cut of beef that is flown in and prepared just for you, without compromise to taste / texture.
BLACK ANGUS In order to be labelled “Certified Black Angus”, the cattle also have to meet stringent requirements by USDA.
RIBEYE STEAK Beef steak sliced from the primal rib with the bone removed. The marbling of fat in this cut makes it perfect for grilling. And so far this has just been about the cut of beef!
ALL ABOUT THE BEEF PREPARATION & DONENESS So what happens after this beautiful, well crafted cut of ribeye comes through our doors?
We cut it into slices that are 2 inches thick so that each slice can be charred on the outside while the inside remains moist and the perfect doneness is achieved. Each slice weighs between 500 – 700 gms. After seasoning it lightly, it is charcoal grilled for that added smokey char flavour, to perfect doneness – which means Medium Rare (warm red center at 40 – 45 ◦C).
For your eating pleasure, we trim away the sinewy tissue & fats, and cut it into bite size pieces.
That sinfully delicious fat does not go to waste – we mince it and wok fry it with rice and dark soy sauce, resulting in what our customers have nicknamed “heart attack fried rice” WAIT THERE’S MORE! To complete the dish, we also include: - Quality Idaho potato wedges - Caramelised onions - Condiments: Mustard, Ketchup & Sea Salt Now that all’s been said and done – there’s only one thing left to do: ENJOY!
